Hellllloooooo FALL!!!

So yesterday morning i was craving some pumpkin buttermilk pancakes! With fall here i just crave a nice warm breakfast while i'm in the kitchen and i feel that nice cool air right on my back. Mmmm, i love cold weather!
This is the day the Lord has made, we will rejoice and be glad in it! Psalm 118:24
Since i had buttermilk left over from the vanilla cake that i had made on Wednesday night, i used the rest of it and it turned out perfect :) They are always so yummy, moist and soft. I gotta say they are my favorite. Hubby liked them but Sammy not so much. LOL Oh well more for mommy and daddy :) Here's the recipe and some pictures! Enjoy :)

Buttermilk Pumpkin Pancakes

Ingredients:
1 cup All-purpose Flour
¼ cups Granulated Sugar
1-¼ Tablespoon Baking Powder
1 teaspoon Baking Soda
1 teaspoon Nutmeg
½ teaspoons Ground Cinnamon
1 cup Buttermilk
¼ cups Vegetable Oil
1 Egg
1 cup of Canned Pumpkin

Instructions:
Mix all of the dry ingredients, then add the buttermilk, oil, egg and the pumpkin. Whisk until thoroughly blended.
Heat your skillet on medium heat. Add a little butter. Once melted and you know your skillet is hot, using an ice cream scoop, pour a small portion of the pancake batter onto your skillet to form your pancakes. When bubbles start popping up, gently flip the pancake. Cook until nice and golden brown on both sides. And then let your pallet enjoy the taste of these delicious and tasty pancakes :)






And since i also had whipped cream left i topped it off with a tiny bit and it was soooo good :)
